How to make fresh pasta?

Making fresh pasta dough is very easy, all you need is to mix 2 simple ingredients: flour and eggs.

  1. Mix the two ingredients together with a fork
  2. Knead the dough for 15 minutes.
  3. Cover the dough and let it rest for 15 minutes
  4. Flatten the dough with your hands or a rolling pin
  5. Run the dough through a pasta machine through all the settings
  6. Make it into your desired shape of pasta

For every 100 grams of flour, you add an egg. So if you are cooking pasta for 4 people, you would use 300 grams of flour and one egg.


150 gr white flour

150 gr semolina flour

3 eggs

Mix the flours and make a fountain with a big hole in the middle. Put at the centre of the fountain the eggs and start mixing the eggs with a fork. Once they are mixed thoroughly, start bringing in the flour. When all the flour is mixed in start kneading the dough with your hands. Knead on a flour-dusted surface for at least 10/15 minutes for a perfect result. Make a nice and smooth ball. Wrap in cling film and let it rest for 30 minutes.

Divide your dough into a smaller ball. Flatten the ball with your hands so it can fit the thickest setting of your pasta machine. Use the thickest setting three times and each time fold the dough like a wallet. Use all the settings up to the last one once. Dispose the layers on a flour-dusted surface and cover with cling film. Make it into your desired shape of pasta.
