Spaghetti alla chitarra or scialatielli

Scialatielli is a type of pasta coming from South of Italy. They are a kind of spaghetti but very thick.

250 gr mushrooms 

Passata Cirio

150 ml cream

150 gr cheese 

250 gr parmigiano

Put a thick pasta layer on your guitar and pass your rolling pin over the layer so that the pasta falls down.

Sauté onion in hot olive oil. Cook for 5 minutes over medium fire. Cut the mushrooms in thin slices and add them to the onion. Sauté for 5/7  minutes. Add the tomato sauce and let it cook gently for about 1 hour and half. Season with salt and pepper.  Pour water into a deep large pan and bring to boil. When the water is boiling, add the scialatielli and cook for 10 minutes or until cooked through. Drain them and add to the sauce. Add the cream, cheese and parmigiano to the pasta.
